I use butternut squash a lot, in all sorts of dishes from delicate butternut and pine nut raviolis to deep, rich stews and curries. It can be a bit of a faff to prep so I thought I would share a step by step prep in pictures.
Step 1 : top and tail the butternut and then cut in half where it starts to bulge out.
Step 2: peel, I like to use a speed peeler.
Step 3: cut in half length ways.
Step 4: slice into length of thickness required.
Step 5: dice into size required.
Step 6 and 7 : use a spoon to scoop out the seeds.
Step 8: slice into length of thickness required.
Step 9: dice into size required
