I think the secret to a good tomato sauce is the quality of the tomatoes. I know this sounds obvious but I have been trying for a long time, with lots of different ingredients, to get a good tomato sauce and now I know, it’s all about the tomatoes haha!
All you need to make a super speedy meal are these 6 ingredients…
All I do is add two tablespoons of good olive oil to a cold frying pan, then add two big juicy cloves of garlic, chopped, only then introduce some heat to the pan. Adding the garlic to a cold pan helps to prevent burning and give you much more control.
Add the carton of tomatoes and bring to a simmer. The tomatoes I’ve used here already have olive oil and garlic in them, extra flavour!
At this point add your rav’s to lots of boiling water. These will only take about 3 or 4 mins.
Once the sauce is simmering add salt, pepper and maybe a bit of red chilli flakes, a 1/4 to 1/2 a teaspoon will just give you a little warmth but no fire.
To finish the sauce grate in about 75g of parmesan and stir. The parmesan is used here as a seasoning rather than a cheese. It doesn’t so much give you a cheesey sauce but gives depth and richness to this fresh sauce.
Drain your rav’s (keeping some of the pasta water) and add them to the sauce. Add some of the pasta water to bring everything together and make the sauce more saucey 😁
Rip the basil and sprinkle over the rav’s and sauce.
Serve with a big glass of red!
If I’m honest the Tesco rav’s didn’t have much flavour and they served more as pilllowy carriers of the sauce. Of course I could have made my own rav’s but that’s a whole other ball game.
