Super Speedy Spicy Tomato and Black Bean Stew

So this is called supper speedy stew because, despite being called a stew, it can be whipped up in minutes, and with a four month old to look after I need speedy!

Ingredients

1 tin of black bean (including the liquid)

1 tin of chopped tomatoes

Half an onion (chopped)

1 teaspoon Bouillon stock

1/2 teaspoon ground Cumin

1 teaspoon ground Coriander

1 teaspoon Chipotle chili flakes

Black Pepper and Sea Salt to taste

Method (if you can call it that)

It is as simple as, fry the onion in a little oil, once they have softened, throw all the other ingredients into the pot, bring to a simmer and cook until throughly heated through.

Serve in bowls topped with sharp cheddar cheese, and a soft wrap on the side.

Its comforting, tasty and doesn’t require much attention, unlike the 4 month old 😉
